Basic Peanut Sauce

This peanut sauce is great alternative to store bought satay sauce, which often contains sugar or preservatives. You can use it as a dip to summer rolls, veggie sticks, or grilled chicken. If you add a little more plant milk you can use it as an actual sauce and serve it with rice and vegetables. The peanut sauce tastes best if you use peanut butter from roasted peanuts, however, regular peanut butter will also work. Always make sure that the peanut butter you buy is made from 100% peanuts.

Ingredients

2 tbsp peanut butter (unsweetened)

1tbsp honey

1tbsp soy sauce

80ml plant based milk

Method

Combine all ingredients in a medium bowl. Whisk till smooth. Serve immediately or store in the fridge for later use. Enjoy.

Popeye Patties

Hmmm- I love burgers! They are such a fun dish to make. These spinach patties are great, if you are looking for a healthier, vegetarian burger option.  Making your own sauce is also really simple. Try the mustard sauce below- it is prepared in no time and super tasty! Get creative with your toppings! I like to add feta cheese and grilled vegetables. Or how about a fried egg and some hot sauce? I often make one or two patties more and add them to my breakfast sandwich the next morning. 

Ingredients

(4-6 patties)

500g frozen spinach

2 eggs

4 tbsp chia seeds

1 onion

paprika spice

salt, pepper to taste

For the mustard sauce

1 tbsp tahini

2 tbsp mustard

1 tbsp honey

lemon juice from 1/2 lemon

Method

Heat oil in a large saucepan. Add the chopped onions and fry until soft. Reduce the heat and add the frozen spinach. Boil until the spinach is thawed.

Place the spinach in a strainer and use a spoon to remove any excess liquid. Transfer the spinach into a large bowl and add the eggs, chia seeds and spices. Stir well and let sit for about 10- 15 minutes.

In the mean time whisk together the ingredients for the sauce. Prepare the burger buns with lettuce, tomatoes and pickles. (Or other veggies of your choice)

Heat oil in a pan and press the spinach mixture into patties. Fry each side on medium heat for about 3-5 minutes, depending on how thick your patties are.

Place the patties on the burger buns, add the mustard sauce, enjoy and become as strong as Popeye!
